Gazpacho Guacamole

Ingredients

avocado, peeled and chopped

tomato, chopped
|
|

jalapeno pepper, minced
|
|
|
| 1/2 |

cucumber, peeled and chopped
|
|
|
| 1/2 |

onion, chopped
|
|
|
| 1/2 |
teaspoon |
paprika
|
|
|
| 1/2 |
teaspoon |
salt
|
|
|
| 1/8 |
teaspoon |
chili powder
|
|
|
| 1 |
Tablespoon |
sour cream
|
|
|
| 1 |
Tablespoon |
parsley, chopped
|
|
|
Directions:
Place avocado, tomato, jalepeno, cucumber and onion in a medium bowl. Stir together.
Add paprika, salt and chili powder; stir to combine.
Stir in sour cream and parsley.
Refrigerate for at least 1 hour.
